LCHF Stuffed Bell Peppers

Now I know bell peppers are a little risky on carbs, but I think we can get away with this one! You can really change this nutritious low-carb meal idea in so many ways - different stuffings, mayo flavors, seasonings, etc.

 

What you will need:

Skinless chicken breast fillet

Martinnaise Ultra Creamy Banting / Keto Mayonnaise

Himalayan Crystal Roack Salt

Coarse Black Pepper

Your favourite Gouda or Cheddar Cheese

Fresh curly parsley

Red or Yellow Bell Pepper

 

How to put it together:

I decided to go with shredded chicken breast - precooked in some coconut oil and seasoned with pink salt and coarse ground black pepper. and once shredded, mixed with a generous helping of Martinnaise Ultra Creamy LCHF Mayonnaise.

We cut a large bell pepper in half and cleaned out the pips and white fleshy bits. We then filled the bell pepper with the chicken mayo mix and grated a generous portion of Gouda cheese over it and scattered chopped curly parsley over it for garnishing. It then went into the oven for 15 minutes at 200 degrees Celsius on the low rack position.

 

Lets serve the meal:

Make a side salad of fresh leafy greens, baby plum tomatoes, onions, cucumber and garnished with some crumbled feta cheese and a drizzle of MCT as a dressing this was easy, quick and nutritious and not to mention simply delicious!
